Oftentimes when we start paleo and low carb diets, we seek alternative options for our favorite foods. We turn to almond flour in replace of all-purpose flour. We choose cassava / yuca root instead of corn or flour tortilla chips.⠀

🍃By now many of us know that almonds are very high in oxalates. If you are new to oxalates, I recommend checking out @sknorton. And without the chance of properly soaking almonds in our almond flours, we don’t stand a chance with antinutrients. Note: Soaking and cooking will not do much with oxalates but may help reduce some lectins and phytates.

🍠Cassava. Cassava is a root vegetable. We use the cassava root as a food and even as medicine.⠀

⚠️Cassava is used for tiredness, dehydration, sepsis, and even to induce labor. That said, no real scientific evidence exists currently. The cassava root and leaves are eaten as food and the nutritional value of cassava is similar to a potato.⠀

❓IIFYM?⠀

🚨Well, did you know that cassava, cassava contains chemicals called cyanogenic glycosides? These chemicals can release cyanide in the body (cyanide that is also in fruit seeds). Cassava must be prepared correctly before eating to prevent cyanide poisoning.⠀

‼️Yes, in its pure form, cassava is deadly for consumption.⠀

☠️Just how undercooked beans can be deadly.⠀

☝🏼Oddly enough, cassava isn’t even low in carbohydrates! Maybe because it is high in resistant starches, the assumption is that a lot of carbs won’t get absorbed?⠀

⚠️But most of all, cassava is also very high in antinutrients. Saponins, oxalates, phytates and tannins—all included. If you’re eating cassava chips with nutrient-rich foods, don’t expect much of the nutrients to get absorbed.⠀

🥩Or you can just eat beef—even in its raw, pure form.
